Time to get back on the ‘cook and map my way around the world’ project and maybe try to get it finished this year. This is a go at ‘labneh’, which is basically like strained Greek yogurt… Greek yogurt in a cloth and colander and let drain overnight. Now it’s the consistency of soft cheese.
