Trinidad and Tobago on my cook around the world project.
I’m being lazy and not really cooking here, making a really bad Old Fashioned and using the old Angostura bitters, which are made in Trinidad.
‘Angostura bitters (English: /æŋɡəˈstjʊərə/) is a concentrated bitters (herbal alcoholic preparation) based on gentian, herbs, and spices,[1] produced by House of Angostura in Trinidad and Tobago. It is typically used for flavouring beverages, or less often, food. The bitters were first produced in the town of Angostura (now Ciudad Bolívar, Venezuela)…’
The smell of this is pretty much like Old Spice aftershave…like nearly identical, I’m right back in our 80’s bathrooml. Is it the same stuff?

Trinidad next on cook around the world and this is a go baigan choka….pretty similar to baba ghanoush but with a curry kick.( I was a bit lazy and could mash this up a bit more)
This is nice but I’m not sure I’ve ever loved the aubergine as much as other people
