Tanzania next on cook around the world and this is sukuma wiki, an East African dish with collard greens.
I’ve used kale as I’ve never seen collard greens around here. According to Wikipedia:-
‘The literal translation of the phrase ‘sukuma wiki’ is to “push the week” or “stretch the week”. It is a vegetable that is generally affordable and available all-year round in this region. It forms part of the staple dish in this region together with ugali or sima.’
This is a pretty nice way to jazz up kale, I like the smoked paprika taste.
