Belize next in cook around the world…this was an attempt at rice and beans,
Long boring story but I didn’t particularly enjoy this as it was as I’m not sure if I’m a fan of coconut milk, and the rice was cooked in some. (Coconut milk tastes a bit grime-y slime-y to me, it’s OK like but I wouldn’t be mad about it.)
Then I thought it reminded me a bit of a burrito filling from Boojums and so I grabbed a roti I had left over and stuck some browned chorizo, cheese, lettuce….and that was much better…no offense Belize, this wasn’t for me.
