Traditional Food in Belgium map | Carbonade flamande, Trappist Beer and Waffles

I’m moved on to Belgium on my eat my way around the world challenge.
Surveying the dregs of the cupboard and fridge I decided to have a go at Carbonade flamande, a Flemish recipe with beef, onions and beer. There is a bit of thyme as well which I can just about manage to find in the spice cupboard.
I had to use a can of IPA from Florida for this as it was all there was in the cupboard. Obviously though you should be using a strong, dark Belgian beer.

The recipe said serve with some mash and sauerkraut.I like sauerkraut, maybe even love sauerkraut but it doesn’t necessarily like me

Trappist Beer

It has never been a problem to find and enjoy a Trappist beer. My personal favourites are probably Westmalle, Chimay Blue and Orval.
Chimay and Westmalle are tied up to happy memories of camping in France on holiday. Plus they just taste fantastic. A glass of Orval is a small pleasure.
